Rattlesnake
This specimen was of the timber rattlesnake variety, but would work just fine with diamondback. Made this for dinner today to change things up.
Cut snake into roughly 8 inch sections (skinned and cleaned of course.)
Place on aluminum foil, two meat sections per piece of foil.
Add paprika liberally, 3 pats of butter, 1/2 clove of garlic, and 1 tbs. minced onions.
Add salt, pepper to suite taste.
Wrap the foil around it tightly (better to double wrap it.)
Cook on grill for 10 minutes on each side.
Unwrap and serve. The meat pulls right off the bones.
Tasted EXCELLENT. Simple dish with lots of room for tweaking or improving. Does anyone have any suggestions for improvement? As for you naysayers, my wife was disgusted until she tried a bite. Give it a shot. You won't regret it.

I do love me some Rattlesnake.
I used to saute rattlesnake with eggs for breakfast. Add some butter and a little garlic and you'll find it is quite tasty.

After cleaning and skinning, we would pre-boil the segments, then cook them over the fire with some basic seasonings and maybe a bit of hot sauce...

I only once smelled one with the casing off and I do not remember that smell. With the casings still on and 20 or 30 bunched up in a den, I can see where one might say that. I know what a den smells like but it is hard to describe and it has been a long time since I smelled a rotten canteloupe. They do not last long enough around me to rot. So don't quote me.
