Beef Tongue
With the 1/2 STEER  that I bought to go along with my Jess Hall's seasoned salt I also got one-whole beef tongue.
All I have to say is that thing is HUGE. I'm sure the HEIFERS  thought that it was real sexy, but... now that I've got it in the freezer, what in the hell do I do with it??
Anyone got a clue on how to cook it? I'm open for suggestions.

The best way tongue is prepared is in a taco and it's amazing.
In my opinion, the best way to prepare it is first boil it in a slow cooker for a few hours, maybe overnight (tongue is pretty tough) with some garlic onions and peppers then cut it into very thin strips and saute it with garlic, peppers, or whatever you want to taste and prepare the taco as you normally would.
Delicious.

Corned beef tongue is a delicious treat available in many deli's. My grandmother, mother and wife have all prepared it. Consider yourself lucky to have received this.

I've had it boiled, fried, and roasted and it is delicious. it tastes a bit like the dark meat on a cut of prime rib.

ABC 123, The only method is to boiled it and then peel as stated. That said its the slicing thats muy importanta. It must be sliced very thin on a bias. The tounge is shaped like a hi-heel shoe, as a RHander the heel is to the R.
Best way to eat it is a classic Italian recipe; Tuna Tonna.
It was one of the first things I ever cook professionally. There is an ancient rumor that it is a great sexual tool once peeled and still warm,,,,

Dang, Chef. I had to google to figure out your slicing instructions, but I think I've got it now...
As far as the sexual tool statement... my googling on that subject only turns up a certain ps.com thread on beef tongue. Is this a recollection of some wild escapade while at chef school perhaps? Wow. Who would have thunk it? ... And here I was, all these years, thinking that normal, run of the mill fraternity parties were wild....

ABC, the first recipe linked by ACe is from "21" ; my first estage was working the door at the Bar with Walter the M'd. It brought back fond memories, any rate I remember that recipe that should be GTG.
Oh, and that beef tounge sex thing that you increased your google fu with...get back to cookin' dammit, 'cause the possibilites with that could bend your mind; and like you, I wondered too, but I could never get anyone to verify it, so it has only been rumorer to bring out the real deal down and dirty freak in the girl next door...you could always go the craiglist route though, put a couple ads out. It could read:"in addition to being a Stud, I got a 12" prime beef tounge peeled and warm for ya" That is, of course, if the research is that personally interesting to you. If you do go down that road plz PM the photo promply.
Where was I, oh yea the recipe, I'll look for it?

Hey, thanks for the links. After the beat-down I got in the "beef vs. longhorn" thread there the thought of searching on "COW tongue" never entered my mind.
Not sure why I didn't pull up all that other stuff.
Not sure exactly what day we're going to cook it... but nevertheless it's going to be interesting.
