Field jacket with liner or Gortex parka?
Which would you QPs and Veterans say is best for being in the field during a north Texas winter?

Without a doubt the Gore-Tex parka to keep you dry, add the fleece jacket underneath if you need it for warmth.

Layers
Layers, think layers.
Gortex, for sure, if the weather looks wet or windy.
Keep away from cotton products next to the skin and in the next few layers. A thin form fitting poly-pro type underwear followed by other layers of similar items.
Other than that, light and fluffy to trap air and easy to remove before you overheat and start to sweat. If you are moving remember to have something to carry or strap down the stuff you take off. Hate to walk around with an arm full of cloths.
I wore a field jacket liner under my cammies on many an FTX.

After living in N.TX for many years, the first question is, what winter? What months are you going to be out? Jan-Feb are the 'worst' and light polypro with normal duty uniform and gore-tex is going to be great if you're not on a hide site (not warm enough), or are not moving too much (too warm). where are you going to be - hill country, or open plain. Lots of little things go into uniform selection, especially there in N. TX - could be 80 one day and 25 the next...

Also, if you are going to be doing a lot of heat producing activity dry cool is better than wet hot so think about making sure you ventilate your clothing and if possible uncover your head wind chill allowing. Seventy percent of your heat loss is through the vessels in and around your head and if you can control that you can do a lot to prevent overheating and/or saturating your clothing which will go a long way to preventing hypothermia later on.

A mid-weight fleece and a lightweight, packable shell. You will never need a full shell/rain parka. Be sure to buy a fleece with pit zips if you're going to be doing anything aerobic.
