Spaghetti Squash Casserole

I made Spaghetti Squash Casserole & I think I did good...

Cut squash and clean out seeds.
Backed squash, 350deg, 1 hr, face down, when cooked, scoop out flesh.
Backed chicken hips until the meat falls off, I used 3, chop meat.
Combine in shallow backing disk, top with sauce and cheese.
Drizzle a little EVOO, Bake @ 250 for 3 hrs.

I didn't add any spices, but used some Tabasco at the table.

I use slower cook times to allow the sauce to caramelize and thicken. Not everyone's like, but it is mine.

I sit here well fed and content..

Put it on your list this week. After I bake/roast it as JJ_BPK mentions above I use a fork and pull it so it looks like spaghetti...then toss with some marinara and chow. Or sometimes I drizzle with EVOO, sprinkle with salt and pepper. It's so good!

I will have to try this recipe though.

When cooked it has the looks and texture of real spaghetti, but has a slightly sweet mild taste. It's a very good replacement for the starch. With butter or EVOO it makes a great side veggie.
