The reason is simple. Your head (ears) control your balance and your eyes see the best when looking straight out of your head. You are in the best balance when the head is upright and relaxed. You see the best when the head is upright and relaxed.
As a rifle doesn't have ears or eyes, it shoots just as well canted as straight up and down. Don't hesitate to cant the rifle to bring the sights to your eyes. Compromise with the rifle only after you have done everything possible to make the rifle suit your body type and position.
