X Best Ever Beef Stew

X Best Ever Beef Stew

This one is a real crowd pleaser during cold weather. It's also very low in both saturated fat and carbs, so its great for those of us training up for something. I'll usually make a pot on Sunday and eat it all week.

Seasonings:

1 3/4 tsp savory
1 1/4 tsp garlic powder
1 1/4 tsp onion salt
1 1/4 tsp mustard powder
1 1/4 tsp marjoram
1 1/4 tsp chervil
1 tsp black pepper
3/4 tsp ground sage

Ingredients:

1-1 1/4 lbs. stew meat, 1 inch chunks
8 cups low sodium chicken (yes, chicken) stock
1 bottle beer (I suggest a hearty lager)
1 large onion diced
1 cup celery thinly diced
1 28 oz. can diced tomatoes w/ juice
3 carrots chopped
1 lbs fresh mushrooms, halved
1 cup frozen corn
2 cups fresh green beans

Heat pot over high heat, no oil. Rub 1 tbsp. of seasoning mix into meat. Add onion and celery to pot w/ rest of seasoning mix. Saute until onions become translucent. Push vegetables to one side and add meat to brown. Dont' worry if the pot starts to smoke. Add 2 cups broth and deglaze bottom of pot w/ spatula (ie, scrape the burned spices off the bottom). Liquid will take on a rich brownish color.

Add remainder of ingredients, including beer, vegetables and remaining stock, and let simmer for 1-2 hours . Enjoy!

Unless you're training up for a body building competition, a low carbohydrate (in general; of course high glycemic carbs are a different story) meal isn't going to help you much.

Razor,

I'm not a low-carb guy. It's just that I tend to eat more than enough carbs while grazing during the day or at breakfast. Also, the stew keeps better without potatoes or pasta in it to disintegrate after a couple of days. YMMV.

I lost 20 lbs on a low-carb diet. Have only gained back 10 since I went off. LOL

RL, how much of the 20lbs was body fat, and how much was the extra water required by the body to properly break down complex proteins? How long have you been off the diet? I'm not disputing that a low-carb diet works, but the results are normally short-term (20 off, 10 back) as folks can't sustain that lifestyle for a significant period of time, you're really stressing your kidneys, and no one seems to have decent long-term effects studies. As with other things in life, the quick fix is rarely the right solution to the problem.
