Hearth Cooking

Found this you tube site that is very interesting regarding hearth cooking and 18th century cooking, since it is foodcentric I suppose this is the forum for it, although I speculate the hungrier you are the more gourmet some of the meals might seem...some meals look very good to me.

It's all fun and games until someone has to clean that pot.....

Seriously braising is an art and while this guy has a basic understanding a chef he's not........ watching his pot boiling like a nuclear reactor was a little disconcerting....

In my opinion food cooked over a fire smells and tastes a whole lot better than crockpot cooking.......

I would like to try the hearth cooking, wood fired oven and dutch oven cooking so I appreciate the article and any tips. This guy's videos on bread, his ovens, and soldier's rations made me think about food in a way I had not really considered. Myself I look over some of the aspects as my goal is to eat and share good food prepared with fire. I recall looking at some of the supplies lists for wilderness groups at the turn of the century and realized there was much to learn about transforming raw ingredients into savory dishes in the back country.
