beets

my first golden beets of the year...oil them and roast them at 350 for about half an hour...garden candy

I love to use the fresh beet green for a salad. Damned tasty.

yes...i use the greens as a salad bed for the roasted beets...i add goat cheese and sometimes walnuts then dress with a simple balsamic vinagrette...

When I was in pre-ranger, we were actually supposed to get hot chow in the field one day. Chow hall screwed up, filled all the mermites with beets. Never looked at them the same again.

I could lose up to 2400 calories a day on a beets and quiche diet.

My mother used to make pickled beets then serve them hot with sweet and sour sauce. One of my favorite side dishes...
