Coconut Milk Recipes

I need recipes that use coconut milk. We keep buying more cans and not using them and I need to clear more space in the cupboard.

Drinks, food, whatever. I'm hoping the guys in Thailand will chime in.

I am asking for entire recipes, not just the titles.

How about a Panang Beef? My favorite Thai dish. I know it uses coconut milk as the base for the sauce and mixes in red curry and a few other ingredients. The guys with the Thai connections can probably help you more than I can on the rest of the receipe.

Tom Kha Gai - Coconut Chicken Soup

A favorite of mine from the restaurant across from my office. Here are some recipes, but it looks like you'd end up having to buy a lot of other uncommon ingredients.

Kluay Namuan - Coconut Bananas

6 - 8 bananas, ripe
2 cups coconut milk
2 tblsp sugar

Peel & cut each banana into 4 pieces. Simmer coconut milk & sugar until thick & creamy. Add bananas & cook until soft, but not mushy.
