Antelope Chops
Alright ladies and gents! Here is the first dinner from the antelope I took on Sunday, 2 October. This is Medallions of Antelope wrapped in bacon, seasoned with salt, coarse ground pepper and a dash of garlic, grilled over alderwood with Fresh Corn off the Cob and Baked Potato. I was more than pleased with the result. The chops were tender, moist and full flavored. Wine was a 2005 Napa Cabernet....

Sausal's Century Vines Zin or peppery Sangiovese would go excellent with that meal. We need to visit and catch up on olde times one day - I'll bring the wine.

That looks great! Antelope is good, but you don't get a lot of meat from one. I highly recommend hunting Oryx (Gemsbok) if you ever get the chance. We have them in and around White Sands Missile Range in NM. The meat is by far the best game meat I have ever had.

My ancestors offered that tip to the Kiowas...but the Kiowas ignored it and fell prey to the culinary advice of some whiskey peddlar from Arkansas their chronicles refer to as being named à-hó after they all tied one on and he wouldn't give them the recipe for a Bloody Mary!*
