Pickling
First year doing this...So far I've grown whatever I pickled....Green tomatoes next...
Got about 7 pints of each of these....so far....ole south recipes.

Got hooked on the stuff in NW Oregon (Astoria) and can't find much around here. Good eatin'!

I am soooo jealous. My mom and most of the ladies I knew as a kid canned and pickled.
As kids we could occasionally grab a jar and head back into the woods and have mini-pick-nicks..
My mom was a Butter Pickle specialists.
The neighbor across the street was the Dill Pickle source. They had a 1/2 doz ceramic pots, maybe 10 gal each. They used the big 7-8 inch cuks.
My two Grands Aunts did canned veggies and meat. The veggies were awful, tasted like store canned stuff,, BUT the meats.. The beef and pork was to die for..

canning Russian style
I have been canning for a few years now -- also all from the garden. I am going to try pickling for the first time using a Russian recipe which call for salt only -- no vinegar. They tasted great over there -- much more flavor. Anyone have experience pickling without vinegar here?

I had a neighbor that canned deer meat. Looked terrible, but the taste was out of this world!

I had a good mustard pickle recipe from my grandmother. Dills and bread and butter are easier, in my opinion.

Try pickled green beans, I think they taste better than pickled Okra.

Working on that next....
Already cooked some battered and fried breens beans...great with a horseradish sauce or horseradish mustard.

Pickled Deer Meat
I've got a jar of pickled deer meat sitting here I picked up from a friend. Too big to eat by myself - and none of the family females will eat any.
While it can be eaten straight from the jar he says it's best if dumped in a fry pan just to knock the chill off.
