Fajita marinade

This is an old favorite of my wife and myself.

1/4 cup Olive Oil
1 teaspoon grated lime rind
2.5 tablespoon fresh squeezed lime juice
2 tablespoons Worcestershire sauce
1.5 teaspoons groun cumin
1 teaspoon salt
.5 teaspoons dried oregano
.5 teaspoons coarse ground black pepper
2 garlic cloves minced
1 (14oz) can of beef broth

Combine the ingredients and whisk together.

Put the meat (I use flank steak) in a ziplock bag with 1.5 cups of marinade and allow it to marinate for at least 4 hours, overnight works best. For beef score the meat in an X pattern and for chicken you can poke some holes with a fork to allow the marinade to work.

For the vegetables I use a 2 red, 2 yellow and 1 green pepper and 1 large onion. Cut the veggies into fajita size portions and place in another ziplock with the rest of the marinade.

I prefer to cook the meat on the gas grill and the veggies in a sautee pan on the stove. But however you want to cook them is ok.

Serve them with some warm flour tortillas and what ever other toppings you enjoy like sour cream or some shredded cheese.

For the broth I would look for the lower sodium kinds and if you cannot find them just skip the extra salt. I have found that regular broth and the salt are just a bit much.
