Here's one I pulled off of Crock Pot Girls, looks a little different so I'm going to give it a try:

Serena Brown Smoked Sausage, Green Beans and Potatoes:

1-2 lbs Smoked Sausage, cut up in bite sized pieces
5-8 Potatoes, washed with skin on cut in chunks
Bag of frozen green beans
Onion powder, garlic salt, salt, pepper
1 large can or 2 small cans of cream of mushroom soup
2 cans beef broth
Place the cut up potatoes in the bottom of crock pot. Add seasonings to the potatoes. Pour bag of green beans on top. Then pour sausage bites on top of that. In a separate bowl, mix up the cream of mushroom soup and beef broth and pour over the potatoes, green beans and sausage. If liquid doesn’t cover, add water. Season again with seasonings. Cook 4-6 hours on high or 8-10 hours on low.

I just did one with a pork tenderloin, two roasted red peppers, and califlower. I had this teryaki/honey sauce I added and roasted it for 4 hours...

Sounds interesting...the cauliflower kind of threw me at first, then I thought of how some people like to use them as a substitute for mashed potatoes.

Slow cook a pork tenderloin? Try a pork shoulder or pork butt, I think they respond better to a long slow cooking....

Cauliflower was pretty good after being cooked in the teriaki sauce.
I've done both butts and shoulders, the tenderloin was just for the two of us so it worked out. I like to make the butt/shoulder when we have a party, not many people up here have tried them.

My best crock pot cooking comes into play when I do it CUI (cooking under the influence). Alll kinds of cool colors comeout then.......

3 - 4 lbs. Chuck Eye Roast - Browned, then placed in Crock Pot
2-3 potatoes- peeled and quartered around roast
3-4 carrots - peeled and cut
1 Med. onion - cut into halves and then sliced across
1 can Cream of whatever you like soup poured over top of everything
1 8 oz. can Tomato Sauce poured over top of soup.

Cook on High 4 hours, or on Low for 8 hours if you want to start it before work and come home to a finished meal.
