Just the other day I was reminiscing about 'the best breakfast sandwiches' and I was taken back in time to a day when the MFFS was still at fort Bragg. There is a little hole in the wall gas station at the intersection of 211/Aberdeen Road and Chicken/Army Road - back the the day its was called "Parks" gas station.
When we would pile onto the cattle trucks on Ft Bragg on our way out to MacKall for jump ops, we would stop at Parks to get breakfast sammies. They would throw the bread right on the griddle with the the eggs, sausage, bacon, ham, and yes - even bologna. My favorite was the egg and bologna with cheese
A fried bread, egg, cheese, and bologna sammich was divine. A cup of joe and a Parks Breakfast sammich was a worthy combination. If you were going to frap in as a HALO student, doing it with a belly full of Parks breakfast sammich would have been a great way to go.

Ahh yes, Parks breakfast sammiches and a hot cup of coffee when it was cold as hell. They did fill your belly and give you a little warmth on those cold mornings.

Recently, I really like to make a vegetable salad in the morning! I like to get up in the morning, pour vegetables from a hose nozzle sprayer, go to wash, pick vegetables from the garden, cut tomatoes, cucumbers into a plate, add onions, and season with olive oil. Masterpiece!

Bro...
What kind of breakfast sammy are you making out of cucumbers and olive oil?
I know that there are many dishes out there that have a vegetarian substitute so I am totally not busting down the idea of a breakfast salad...
HOWEVER
For the meat eaters out there, I have an incredible ingredient that can be used as a cucumber substitute...
sausage links.
I also have a great lettuce substitute...
bacon
One of my favorite breakfast salads is a sliced sausage with diced onions and tomato - served on a bed of crisp, freshly tossed bacon "leaves"
I finish it off with biscuit sized oven fresh 'croutons' and a sawmill gravy 'salad dressing'
