I like to stuff a nice tenderloin with a lobster tail. It is so good and looks really nice when you slice it up for presentation.

Shadow- I gotta try that... And yes, it does look nice on the platter with the bleu cheese melting out of it. I sliced it in 1" thick slices and drizzled a sauce I made using beef stock, garlic, a dash of Lea & Perrins and a splash of red wine. I let it reduce then apply... Sprinkle some chives and sesame seed just before serving.

I agree 100%. For the every day meat shopper/consumer, beleive it or not, Costco has had some pretty good deals. When you can manage the costs, do support the local butcher.
One of the goals this next year, is to rebuild the cellar cool room, modernize it with power and controls. Then I'll be able to hang 500lbs at a time.

The best steak I ever had was at a Japanese restaurant in Arlington Heights,Ill.......  The Kampai, severed Kobe beef which was very expensive but absolutely delicious....

I believe that SF is a 'calling' - not too different from the calling missionaries I know received. I knew instantly that it was for me, and that I would do all I could to achieve it. Most others I know in SF experienced something similar. If, as you say, you HAVE searched and read, and you do not KNOW if this is the path for you --- it is not....

This look like the same place? Says its in Mt. Prospect, which is right next door to Arlington Heights. I'm a sucker for Japanese food and steaks, and I'm thinking it may be worth checking out before I go back to school.

I used to live in the apartment complex directly behind Kampai on Oakton and Elmhurst, so we ate there almost every weekend. Pretty good stuff. Decent sushi bar, too.

In Omaha we used to rent meat lockers in Bennington, NE. Usually two SF types would would go in on one locker. Damn fine meat.

I grilled a 16oz Angus ribeye for dinner tonight which I bought this afternoon - $4.49 at my local Tom thumb - one of the reasons I love Texas.

!961-1968.......Group activated 24 March 1961 with Headquarters at Chicago, Illinois.

Withdrawn 14 December 1969 from the Regular Army and allotted to the Army Reserve (organic elements concurrently constituted).
