Black Beans & Rice

Ingredients

2 teaspoons olive oil
2 tablespoons butter
1 onion, chopped
3 cloves garlic, minced
3/4 cup uncooked white rice
1 cup low sodium, low fat vegetable broth
½ cup chicken broth
1 teaspoon sweet basil
1 teaspoon ground cumin
2 tablespoons Cholula hot sauce
2 15oz cans black beans, drained and rinsed
1 green onion, chopped or fresh parsley for garnish
Kosher salt & ground pepper to taste

Directions

In a stockpot over medium-high heat, heat the oil and butter. Add the onion and garlic and saute until onions are soft. Season with Kosher salt & pepper as desired. Add the rice and saute for 2 minutes. Stir frequently to prevent burning/sticking. Add the vegetable and chicken broth, deglaze, bring to a boil then cover and lower the heat. Simmer for about 20 minutes. Add the spices, hot sauce, and black beans and heat through. Re-season as desired. Garnish with green onion or fresh parsley.

This takes about 30 minutes to make and is a great side dish for chicken or pork. Makes an easy covered dish for potluck parties. Bet this would work good with dark red kidney beans, and would probably hold up with a couple of sliced hot link sausages, too.
