Chicken Fried Steak Recipe?
You can take the boy out of Texas...
Folks, I was wondering if anyone might share a favorite chicken fried steak recipe?
Not much in the way of CFS, mashed potatoes with ground pepper, or Blue Bell ice cream out here in Cali...

First, you need a big cast iron skillet...other than that, my mother never revealed her secrets.

Just put a couple cups of flour in a bowl with some salt, black pepper and a little bit of cayenne, drench pounded round steak in a beer and eggwhite dip, roll it in the flour mix and fry it in bacon grease on medium-high for about 7-10 minutes a side (or until it's golden brown).
It's no good without mashed potatoes and biscuits with milk gravy, though.

Afterwards, reduce the heat, add the flour left over from the dipping to the grease, create the rue, add fresh cracked pepper and whole milk (substitute fresh cream if you want to go upscale) and reduce to your preferred consistency (I like it thick).
OR,, go here,, I think this place is in TS's back yard??
