Pear preserve recipes needed

Just loaded up the wife and kids and picked about 30lbs of pears from a raod side tree. I have a preserve recipe but I was looking for some others out there. My recipe came from a book and I would like to try some of "Grandmas" recipe.

Quarter the pears, make sure they are a even as possible as you want them to cooked together in the same amount of time. Therefore, do not sliced or rough cut them. The unevenness will cause the small ones to turn to mush.

Cook them in a simple syrup which is a one to one ratio sugar to water. If the pears are juice cut back on the water a little. Make sure the sugar is dissolved before place the pears in the simple syrup.

Cook them until they reach the temperature or until they are fork tender. You can also boil the simple syrup and remove from the flame and slow cook the pears as the syrup cools.

Some people add a acid like lemon.

Remove the fruit from the syrup, and place it in your canning jars. Bring the syrup back to a boil and pour into the jars,

Cover and seal the jars.

You can add Vanilla bean to the syrup, or Pear William, or a nice Calvados

What about pear relish or salsa?

Is this done in the beginning of the syurp preperation? Or Just add a Vanilla bean to each jar?

Here you go!

2-3 pears
1/2 c oil (I use canola)
1 c sugar
2 eggs
1/4 c sour cream
1 tsp vanilla
2 c all purpose flour
1/2 tsp salt
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c chopped walnuts


Pare, halve and core pears, chop to yield 1 cup fruit. In a large bowl beat oil and sugar until well blended. Beat in eggs one at a time, then beat in sour cream and vanilla. Sift flour, salt, soda, cinnamon and nutmeg. Add to oil/sugar misture and blend well.

Minx in nuts and pears by hand.

Pour batter into well greased loaf pan, bake 350 for 1 hour or until done.

Thanks -- I will try this on the weekend. My pear tree was bursting so i picked a large bushel. I had planned on making pear sauce and canning it (same recipe as apple sauce) but I will have to divert some pears to this.

mmmm...

On the stove cook down peeled and chunked pears - add just enough water to keep them from sticking to the bottom of pan. As they cook, smash them well, then place in deep pan and transfer to the oven. Cook at about 250 degrees uncovered to allow evaporation. When thickened add spices; cinnamon, nutmeg, allspice and cloves are some I've added in the past.

Can up in pint or quart jars in a water bath.

Uses - on toast, on pancakes, on pork, on winter squash, on my fingers...
