Here is the rub I use for Pork/Chicken:
2 Tablespoons kosher/sea salt
2 Tablespoons sugar
2 Tablespoons brown sugar (packed)
2 Tablespoons ground cumin
2 Tablespoons chile powder
2 Tablespoons black pepper
1 Tablespoon cayenne pepper (to taste)
4 Tablespoons paprika
Here is the mop I use for Pork Ribs/Shoulder:
2 cups Cider Vinegar
1/2 cup brown sugar (packed)
2 Tablespoons kosher/sea salt
2 Tablespoons crushed red pepper
1 Teaspoon cayenne pepper (to taste)
Good stuff. Reminds me of the BBQ I used to get in NC.
