simple Favorite dry rub, bacon wrapped, olive oil drizzled on the skillet, a pinch of kosher salt, brown real good in a hot skillet ( both sides) remove from heat...Slice a big onion cover the bottom of the skillet, put on low heat and put the meat on the onions, let simmer for 30 minutes and then put another onion on top of the meat, cook for about 15 minutes ( longer if you do not like a little snap in the top onions) serve with gravy made from the drippings and a nice touch of red wine in the gravy after it has just come off the heat,,,, Potatoes ( small new reds) boiled and sliced, with a veggie. Add some nice garlic bread and their you go........
