Las Olas Slaw- Las Olas is the name of a friend's place on the beach just North of Ensenada. His sister makes this delicious slaw.
1 Head of cabbage or prepacked bag of coleslaw
1/2 cup of red cabbage diced or sliced thin
1/2 cup raisins or dried cranberries or a combination of both.
1 diced Persimmon or more if needed
1/2 cup cashews
4 oz Olive oil
2 oz vinegar
Mix all ingredients, toss and serve.
