Potatoe vegetable Cheddar Soup
1 quart reduced sodium fat free broth, chicken works but again I like to use other varieties.
5 cups small cauliflower or broccoli florets
1 medium onion, chopped
2 garlic cloves (you can add/subtract as you like)
1/4 tsp dry mustard
1/8 tsp white pepper
1 1/2 cups 1% low fat milk
1 1/2 cups instant mashed potatoes
1 cup (4oz) reduced fat cheddar cheese
Combine all the ingredients, except the milk, mashed potatoes and cheese in a saucepan and bring to a boil. Reduce heat and simmer, covered, for 5 minutes or until vegetables are tender. Add the milk and mashed potatoes simmer for 3 minutes longer. Stir in cheese until melted and serve.
