X Chicken in Potatoes by RL
I have been making this a long time. It's fairly simple and really good.
1 package boneless, skinless chicken breasts 2 1/2 cups sliced fresh mushrooms (or 2 large cans) 1 clove minced garlic oregano crushed red pepper flakes 1 medium brown onion, diced very well (or use onion powder) 2 bottles of chardonnay 2 large baking potatoes 2 cans Campbell's condensed cream of mushroom soup (you can substitute another brand, or cream of chicken, or sour cream) Lots of butter or margarine Open the first bottle of chardonnay and start drinking Bake potatoes at 450 degrees. Cook them for a total of about 1 hour, turning once -- you want them a little crunchy on the outside. Slice chicken into bite-sized pieces and fry in large skillet over medium high heat in butter until golden brown Add mushrooms, onions, garlic, oregano to taste, red pepper flakes to taste, more butter and some chardonnay -- fry until cooked Reduce heat to low. If you're cooking with gas, you want the flame as low as you can get it. Stir in the soup, one can at a time, adding a little more chardonnay and/or butter with each can to help dissolve the soup concentrate. (Note: you can use other soups that are not concentrated, but you'll need to add sour cream for more body) Simmer about 10-20 minutes on low, stirring frequently. When potatoes are cooked, put them in pasta bowls. Cut a deep slit in the top of each potato and squeeze at each end to open them up. Careful -- they'll be hot! Add generous dollop of butter and/or sour cream to each potato, then pour chicken mixture over the top. Serve with the remaining chardonnay and a fork. Open another bottle of chardonnay if needed. |

Round Here we have Red onions, Yellow onions, White onions, Green onions, 1015 onions, and Vidalia Onions, But I have yet to see a Brown Onion. |
