Need Serrano Pepper Recipes
 
I've been informed the first attempt at growing Serrano peppers on the balcony in Sunny Seattle are almost ready for harvest.

Any good recipes out there? I'm not much of a "hot" eater so I haven't cooked much with them. I do know how to handle "heat" when I'm cooking, though. ;)

Apparently the proper description of these guys is - "delayed action tongue rippers" :D I guess they have "killer hang time" :cool: I'm not soo sure I want to try this! :o

I'd appreciate any help in acquiring good recipes or if anyone knows of good cookbooks. Or preservation techniques.

LL,
I like to use Serranos when I want to add a bit of bite but not a whole lot of "pepper" flavor. I think I have posted my Cilantro salsa that I serve with fish on this website before, but here it is again:

1-2 bunches of cliantro
1/2-1 bunch of Mint, stems removed
1/3 of a red onion, chopped
1-2 mid sized Serrano peppers, sliced
Juice from 2-3 small limes

Optional:
1/2 Kiwi fruit, peeled and chopped.

Mix all ingredients and toss as you would salad.

I usually serve this cool with Grilled Fish and a Nice white wine.

The "hot" is in the seeds, which are probably a great addition to chilis in addition to curshed red pepper and hot sauce.

The Serrano is listed as some 4 times hotter than the Jalapeño, be careful..

Thanks Air, for that salsa recipe - any preferences on the kind of fish you serve it with?

I've served it several times with grilled Sea Bass, and with grilled Mahi Mahi with good results.
