Kangkong or kangkung or water spinach or swamp cabbage:D

I’ve concluded it’s just about the best bang for your buck veggie
After recalling how one guest Jumpmaster grew it in plastic bag in Sudan during UN deployment I decided to give it a shot.

I was estatic when I saw germination in 2 days then harvest in a month and reharvesting every 2 weeks. As you can see it grows in prep soil, in wood chips/landscaping media surface, etc. Very very easy to grow and even easier to cook! If you can boil water well you can cook kangkong well. Sautéed garlic and onion w some oil then splash some water in, Toss the kangkung for a min until just before the leaves wilt, sprinkle pepper and salt and voila! Use some red wine if you want it fancy. It goes well w Rice, ramen, stir fry, eel,
Mushrooms, just about anything! Or just toss straight and microwave w leftover baked chicken breast, or eat it raw as crunchy, succulent salad (after wash n sanitize). Throw w bacon for more oomph. Or blend it raw w kale, spinach, banana, and yoghurt for creamy green smoothie...

W nutrition content rivalling spinach and kale, this is the way  I have spoken :o
This quarantine lock down has brought yet another blessing :)

I think I’m going to uproot the cucumber lane that has yet to produce and replace it all with kangkung!

Any of you professional world traveller and exotic food connoisseur have eaten it or grown them? I know it’s about $18 a plate if you ask it by its Chinese name at fancy Chinese restaurant in US bah! Apparently it’s registered as weed over there

Looks like you were making TV dinners. All of which look great.

Thanks Pete!
I don't have any HSLD survival training, but "the martian" like existence appeals to my practical/minimalist/engineer mindset where it's absolutely up to me to make it work with what I have and if things to south I have no blame by myself. Can't amazon prime it, can't take a trip to walmart a block a away. Nada.
I cook on Sunday for the whole week. Pretty much the same things for lunch as you can see in the pictures. Colleagues have asked me aren't you bored eating the same thing every day? That's where the fasted state light cardio comes in at noon. After 16 hours fast and light cardio/weights, you can't help but turning into a hungry hippo :D So I told my colleagues that "hunger is the best spice!" (and the meal is tasty too I promise :) )

Wont hurt to have a few domestic skills too in case my nomadic lifestyle changes one day and someone do a spousal adoption :o

Yes RCummings, make sure to check the local law first!!!
