Pork & Beans
Ingredients:
16oz raw dried navy beans (small), soaked overnight
3 teaspoons salt
1 tablespoon molasses
2 teaspoons prepared mustard
1/2 cup brown sugar
2 cups ketchup
1 tablespoon soya sauce
1 bottle of beer (have used O'Douls without any side effects)
Water to cover beans in the cooker
1/2 lb + bacon, slices raw (Have also used pork cut into ~ 1” chunks, but make sure there’s some fat left on the chunks for flavor. Pork chops are often rather lean.)
Directions:
Drain beans and place in a good sized pot. Add enough HOT water to cover beans by about an inch. Cover and bring to a boil for about 30 minutes. (Beans need to be a little tender before you add the other ingredients. Just works better that way.) Drain and put beans in a large slow-cooker. Add the remaining ingredients (I like to stir up the dry ingredients first to help things out some) and mix all the stuff up. Cover and cook on Low for 10 hours until the beans are tender to your liking. Taste and re-season as desired.
Makes enough for a good gathering of beaneaters. Kind of thick, like baked beans, but you can add a little water during the cooking to thin it out some. Depends on how you like your pork & beans.
