Long Ribs??

Several times lately, I have seen cooking shows serving whole beef ribs, not short ribs but LONG RIBS(??)

What is the proper name and where can you get them?

My mom and aunts would cook short ribs in a bunch of ways, but they all shared a couple traits.

1)the meat was not 1/2 of what these new LONG ribs have
2)they were always overcooked and the meat fell off the bone < this is not bad..
3)nobody every cooked them on the BBQ or smoked them

I want to change that...

Damn those ribs look good...

...know a guy who knows a guy...he says drive to Bedrock and ask for either Fred or Barney.

I bought a rack like that years ago at a meat shop. Boiled them and then put them on the grill. The boiling makes the meat slip easily off.......or so I have been told.
Mine didn't have near the amount of meat that your pics show but the length seems as I remember.

Just returned form Barcelona, had a number of different rib preps, the best was one that was a honey lime with cardamom and the deep grilled flavor. The meat fell of the bone, they were awesome.

Each region has different names for almost every cut of meat. TS posted an attachment in another thread that covered the names pretty well. My wife bought some long beef ribs last year but we can't remember what they were called here. She just saw them in the meat case as she was shopping. I sous vided them and finished them on the grill. I liked them a lot!

Blasphemy !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !!!!!!!!!!!!!


(Use oven, very low temp (150-180), 3-6 hours depending on size) That way flavor stays within the meat. Then grill them.

Now I have to go see the food shrink.

boiling meat is a great way to make soup out of road-kill
...it just isnt how I would cook BBQ

I stand corrected! I had never boiled meat before and those ribs being cooked were at a party. I was talked into the boiling process. It did make the meat slip easily from the bone but I can't recall the flavor of them at all.
My apologies. I promise I will never make mention of boiling good meat on this site again!
