I know very little about bees but am glad this thread is seeing some activity it is certainly educational. To what do you attribute the darkness of the honey in your post?

The pollen bees gather dictates the color of the honey. Bees use whatever pollen they can find, so if lots of plants are in bloom, the honey that results will be a unique mix of different varietals with an equally unique color and flavor. Single-varietal honeys, like clover, have more consistent taste and a lighter color but can only be produced when and where that one plant is in bloom.

Thanks for the explanation, I live in Iowa and have never seen honey that dark.
