Cut some of those halibut filets into 3-4 oz pieces. Make a beer batter and fry them up. You will not taste any better fish than that.
Or, take about an 8 ounce piece, put it on a piece of aluminum foil. Chop up onion, celery, carrots, zuchinni and mushrooms, put on top of the fish. Add a few pats of butter, then sprinkle with granulated garlic. Make a pouch out of the foil, add 2-3 ounces of white wine. Seal the foil and bake for 20 minutes in a 350 degree oven.
