Its Lemon Truffle Risotto time of the year, with summer truffles.
I hope you washed those before you put them in the rice :D
At $750 a pound they better come in clean.....This price if for Australian winter truffles, which are available from this company, great quality. Also most as good as the french and Italian truffles.
Summer truffles quality varies, size, and aroma. Price $125-400 per pound

I'm guessing that picture is not showing a single serving. How much do you use?
DiveMaster, with a truffle slicer, you shave the truffle, by sliding the truffle across a razor blade type edge that produces paper thin slices. Truffles are very aromatic, you only need a few slices to spark a dish.

We have some gouda in fridge that has truffle shavings inside. Apparently the Mrs. has a plan (dream?) for us to move to Tuscany at some undetermined point and acquire a truffle dog.

It would be a sad day when I converted my truffle pig into bacon. Like the scorpion in the fable, it's my nature.
