Every Friday and Saturday the Amish form Lancaster County, Pa set up a pig roast at the Trenton Farmers Market. They put the pig on around 8pm the night before and slow roast it over charcoal till 8-9 am next morning. The pictures are what is left of the meat 2hrs later. They charge $6 per pound. Its amazingly good!!!

Outstanding! The color and crispness of the skin has my mouth watering.;)

Do you know if they add anything to the coals?

Thanks for posting this Chef, as I have never had the pleasure of sampling real Amish cuisine, but have purchased some of their fine wood-work in the past.

Knew better than to look at the pictures, probably good healthy meat to start with.
The American way, pulled pork in Sept., I can see it now a 1000 smokers and spit cookers, I can smell it also :) just like some small Southern towns on a Sunday. Would that not be delicious if you were a marcher?

A part of it might go like this;
