So lately Ive been getting into smoking meat. First tried a pork shoulder, worked out longer than I expected but tasted great. Next I did some baby back ribs using the 2-2-1 method. Once again, AWESOME!!! Recently I found some elk backstrap in the freezer and had a great idea. Has anyone smoked it before? If so PLEASE let me know what you did.:cool:

Elk meat is almost too good to smoke. But, I bet if you smoked it like a tri-tip, it would be a great piece of meat.

Elk backstrap would've never lasted long enough here to be "found" in the freezer. :D

Do they have elk in the cheese state?:confused:MR2 covered it. Up in the Chequamegon area way north. Pretty decent comeback herd, hunting not wide open but they're doing OK. Mine is typically gathered via going out west when I can, with a 180gr Partition, although Commierado gets no more of my money.

First elk HH6 had she vowed then & there I could go whenever I saved the $$ and had the time. As good as it is, she demoted the local whitetail.
