For those who are traditionalists fear not, labels will feature the old and new names.

Chef's fear not, we know what the cuts are by looking at the product, not the labels.;)

Another problem is grocery store chains placing their own names on cuts in an attempt to make tough cuts sound pleasing. Now this, just more garbage to read while browsing labels.

Here's a good place to bone up on your beef cuts. (If you check out their corporate chefs I met and assisted Chef Scott at the Ritz, Cayman Islands.)

Don't see any of those new names at the places I go out and eat at.

Prime Rib, T Bone, NY Strip, Serloin, Pork Chop, Road Kill and of course Buffalo Wings.

I too visited the New York Strip, only I stayed at the Chateau' Briand. Nice place, but a bit snooty for my tastes.

The maitre d' only wished to be referred to by his title, Sir Loin of Beef. :rolleyes:
