Wow. I take it the skewers were not removed from the snapper for fear of tearing up the fish?

RL, the skewers remained because I did not want to rip the skin and I like the Architectural dimension that it brought to the plate. It took a little over twenty years to prefect the concept of this dish.
The skewers are all geisha-hair-sticks cool. Great presentation.
