I have been making this a long time. It's fairly simple and really good.

1 package boneless, skinless chicken breasts
2 1/2 cups sliced fresh mushrooms (or 2 large cans)
1 clove minced garlic
oregano
crushed red pepper flakes
1 medium brown onion, diced very well (or use onion powder)
2 bottles of chardonnay
2 large baking potatoes
2 cans Campbell's condensed cream of mushroom soup (you can substitute another brand, or cream of chicken, or sour cream)
Lots of butter or margarine


Open the first bottle of chardonnay and start drinking

Bake potatoes at 450 degrees. Cook them for a total of about 1 hour, turning once -- you want them a little crunchy on the outside.

Slice chicken into bite-sized pieces and fry in large skillet over medium high heat in butter until golden brown

Add mushrooms, onions, garlic, oregano to taste, red pepper flakes to taste, more butter and some chardonnay -- fry until cooked

Reduce heat to low. If you're cooking with gas, you want the flame as low as you can get it.

Stir in the soup, one can at a time, adding a little more chardonnay and/or butter with each can to help dissolve the soup concentrate. (Note: you can use other soups that are not concentrated, but you'll need to add sour cream for more body)

Simmer about 10-20 minutes on low, stirring frequently.

When potatoes are cooked, put them in pasta bowls. Cut a deep slit in the top of each potato and squeeze at each end to open them up. Careful -- they'll be hot!

Add generous dollop of butter and/or sour cream to each potato, then pour chicken mixture over the top.

Serve with the remaining chardonnay and a fork. Open another bottle of chardonnay if needed.

I've made something very similar and serve over egg noodles. I'll try it with the baked potatoes next time, this sounds delicious.

LOL! I think I counted seven different types of "chicken eggs"!

Had a carton of eggs labeled "Free range chicken eggs". :confused:

Round Here we have Red onions, Yellow onions, White onions, Green onions, 1015 onions, and Vidalia Onions, But I have yet to see a Brown Onion.

You can use whatever kind of onion you want in this dish. You also can make it without onions. Or, for the Texas version, substitute 10 habanero peppers for the onion and do not use any sour cream. :D

How about some chili powder in the Mix also?

Might as well, hell with 10 Habaneros, it's going to taste like Hurt anyway.

Really though, It does sound good(Minus the Habaneros) no matter what color the onions are supposed to be.

Just not quite the same.

I think Waffle Houses come pre-made from the factory with that stale smoke smell and a surly waitress with an obnoxious Yankee accent.

Tried the Chicken and Potatoes by RL last night.

Outstanding!! I used fresh mushrooms and added chives and bacon as toppings. I would recommend this dish without reservation!

Hell I live in Peru and went out Sunday and had Steak, 3 eggs over medium (Organic I think), Hash Browns and Toast with 3 types of jelly. Oh they also had patty and links of Sausage (Jimmy Deans) there if you wanted it. You do have it bad in that liberal Hippie state.:munchin

Yeah could be worse. He is always asking if we are hiring so he can get off that contractor deal with the NAS. He is jealous that I am a GS instead of the bottom dwelling contractors like state says. They do good work but State treats them worse than they treat the locals. Hell there are 9 Retired SF guys in the NAS right now. 1 in MAAG and Me up in DEA. We are all over the place.
