Well OK, that is what the wife calls them.
The first time I had these they were made with duck instead of chicken, but the family doesnt care too much for game so I imporvised. Sister is a Chef in Denver and after tasting these I convinced her to add them to the menu as an appetizer.
You will have to forgive me for the quantites as I honestly dont use measuring devices unless I am baking or trying something from an actual printed recipe.....
Ingredients:
Boneless chicken breasts, thin sliced
Jalapeno peppers. About 4 depending on size
Bacon. 1/2 slice per "yummie"
Soy sauce
White wine
Salt and pepper to taste
Toothpicks
Split breast pieces in quarters. Since these are thin sliced this means length and width. Cut jalapenos in thirds, lengthwise, and seed. Cut bacon strips in half. Take one slice of jalapeno and roll it in a piece of chicken, take a slice of bacon and wrap around chicken/jalapeno and secure with a toothpick.
Take chicken/jalapeno/bacon rolls and marinate in sufficient soy and wine (use your taste buds here, more or less as you like) for a min of 30 min, preferably overnight. Grill until the chicken is done.
The bacon gives it a nice smoky taste, the jalapeno gives it a little bite. These things are great and you will probably be asked to make them again and again. If you like it a little hotter use pickeled jalapenos or a hotter pepper. I susually use fresh ans they taste better and pack a little less of a bite for the rest of the family. I supose that green pepper would work as well if you really dont like it hot, but you will miss out on the bite you get from the hot pepper.
