SKILLET CHILI & BEANS for ONE

Ingredients:
(You need 2 pans…a skillet (cast iron is best) and a small sauce pan)
¼ pound Lean Hamburger (like 93% Lean)
¼ Cup Onion, chopped
¼ Cup Tomato, chopped
¼ Tsp Ground Cumin
¼ Tsp Chili Powder
2 TBS Catsup
Salt and Ground Pepper to taste
1 Can Pinto Beans
1 Can Corn
1 Can Ortega Green Chilies, diced
¼ Cup Cheddar Cheese, shredded (optional)

Directions:
In sauce pan combine beans, corn, and green chilies. Heat it up.

In skillet, sauté onion until brown. Crumble up beef and add to skillet. Add cumin and chili powder. Add tomato. Add Cholula and catsup. Add salt and pepper to taste. Stirring all the while to heat thoroughly. Add two large spoons (like slotted serving spoons) of beans/corn/chili mixture with liquid to the skillet and heat thoroughly, stirring regularly. Serve in a large soup bowl. Add cheese if desired.

This takes about 20 minutes to make. Six Weight Watcher Points per serving.

Been looking for a good chili recipe. As soon as I try the jerk chicken, I'll try this.:D
