Pico Di Gallo

2 Large Tomatos
1 Large White Onion
3 Serranos
3 Jalepenos
1/4 cup diced Cilantro
Salt
Pepper
Water

Julian (Cut into really small cubes) the tomato's
Dice the Onion
Dice the Serranos and Jalepnos.
Discard the steams and ribs but not the seeds
Add the Cilantro
A pinch of Salt and Pepper
1/4 cup of water.

Mix in large mixing bowl.

****Add more or less Serranos, Jalepenos, or Habenros to your taste.

Smokin Joe Does the Cilantro have to be fresh or can it be dried?

Fresh is better but your the one eating it so I'd say its up to you. :D

Hand full of fresh Cilantro
4 large hot peppers (you pick the kind add more if needed)
1-quarter piece of garlic
Half of an onion
10 tomatoes chopped
Juice of one fresh squeezed lime
(You may need to add water depending how thick or thin you want it)

Put it all in a blender and liquefy

Pour in to large bowl
Add one each chopped up
Green, Red, Yellow Bell pepper
5 tomatoes chopped

Add Salt to taste
Put in refrigerator for 24 hours

Enjoy
