It seems that rural Russians enjoy eating Beaver in it's various forms.
Here are some pics.

In Russia, the people eat beavers. First they go to the forest, get some fat nice beavers the way other hunters catch hares or let’s say birds then cook and eat them. They say it’s very tasty and can be cooked just like some any other meat.

I helped a friend trap some beaver a few years ago. Everything to him tastes "fantastic!!". So, I took a nice large "hind quarter" home to try out. I prepared and cooked it in the oven similar to a prime rib. It did indeed smell fantastic while cooking...however, to me, it didn't taste so good. You can live on it, however I didn't remotely like the very different flavor. It must be an acquired taste. During the winter in Alaska, they eat the same thing a moose...sticks, but not even close in the taste department!

We had a student kill one (allegedly in self-defense) during Land Navigation.

The instructors skinned it and let him have the carcass to cook.

Maybe roasting it over a fire is not the right way to cook it, but it tasted pretty bad. We went back to our C Rats.

My dad has trapped beaver his whole life, and has cooked it for us when I was a youngster ( I know, still a youngster). Bar-B-Q was the best. He made jerky out of almost all parts, including the tail. I thought it was pretty good, but he spiced it up. Can't imagine rotisserie beaver tastes very good though.

I have eaten it a couple of times at the shack, after a long day in the woods. It was not bad, but not something I would bring home to throw on the grill. I might add that I am not finicky when it comes to food. My advice would be to get some Jess Hall's Seasoned Salt if you plan on making beaver part of your menu. After all, as TR said "You can make pretty much everything but broccoli edible with [Jess Hall's]." :D

In 70 a gal, who was a neighbor, invited us all over to a BBQ beaver party.

Her father was a Nebraska game and wildlife commision type. I invited a lot of gals to a beaver party. They came.

Truth is that 55 pound BBQ beaver was damn good.

I just Jerky'd some Elk strips. I used Stubb's BBQ spice rub. I'm going to order some Jess Hall's soon. I hear it's worth the effort.

Who else has used Jess Hall's with Elk?

That wouldn't have happened around Mar 84 would it? I was a land nav student then and one of the other students was charged by a beaver on top of a hill. He back peddled and tripped over a log. As the beaver ran up between his legs he mananged to bring up his dummy corded M16A1 and buttstoked it to death. At least that was his story. I remember the instructors skinning it out and we roasted over a pit. Agreed it wasn't the best tasting but was a break from our C rats. Little did we know we only had one more week of C's that class and then it was MRE's for the next 24 years!

The Mountain men wrote of the beaver tail as good chow.
Of course if your hungry and cold, it makes the meat taste better.
