Tuna Tartar
4 – 6 oz of Dice # 1 or 2 Tuna
1/4 tsp Chive (small circles)
1 1/2 tsp Dice apple (Granny Smith)
1 1/2 Diced Cucumber


Chive Oil
Truffle oil
Rice wine vinegar
Cinnamon
S & P

Question here!! What is the difference between the two Truffle Oils listed above?!?!:D Martin

Method:
Quickly sautéed the apples with a tiny bit of butter add the touch of Cinnamon. Do not cook the apples!
In a bowl put all your ingredients except the oil’s and rice wine. Add a bit of each oils and stir with a spoon then add the rice wine. What you are looking for is a balance of acidity counterbalanced by the oil flavors. If you put too much rice wine vinegar in you will cook the tuna. Remember you want to taste the tuna. It’s all personal preference. Season at the end. Mold or serve in a martini glass.

One is made from white truffles and the other from black truffles.

I tried this recipe over the weekend for 12 people and it was a big hit. I used white truffle oil and replaced the chive oil with avacodo oil which worked well. Thanks again Chef.
