With the temps on the increase, and instead of standing over a hot stove or turning on the oven and heating the house up, what are some of your best summer time meals, that are quick and satisfying/fills you up?

I've found a great solution!

A local supermarket sells pre-made chef salads - turkey, ham, baked chicken, and others besides. The small ones are generous, and the large ones would satisfy the heartiest appetite - or two people could split one. I pick a small one up in the afternoon and take it home.

Toss on a little salad dressing, and you've got a meal.

By the way - Rainier cherries are in season. They make a perfect dessert.

4-6 chicken breast
Salt and pepper
Tangy Grilling Sauce, recipe follows:

Tangy Grilling Sauce:
1 cup Worcestershire sauce
8 tablespoons (1 stick) butter, melted
2 lemons, juiced

Combine all ingredients in a bowl.
Yield: 1 1/2 cups

Season chicken with salt and pepper. When coals are white, spread them out for even heat distribution. Place chicken pieces on the grill. Brush grilling sauce on chicken through the cooking process and turn chicken as needed. Brush with grilling sauce just prior to removing from grill. Serve warm.

Mmmm tasty! Saw a version of this on the food network a while ago. Serve with grilled corn-on-the-cob, and vegetable skewers! :lifter

My family and I really enjoy making sandwiches or other "cold" meals during the summer. Thanks to the high temps and higher humidity standing on the deck to grill dinner is just not much of an option from mid June through Mid Sept.

My personal favorite is a chicken waldorf salad

2 cups shredded cooked chicken breast
2/3 cup halved seedless red/purple grapes
1/4-1/2 cup chopped walnuts
1/2-3/4 cup fat free miracle whip (mayo will work as well)
1/2-3/4 cup fat-free sour cream
3 to 4 teaspoons lemon juice
2 teaspoons Dijon-style mustard
1/2 cup chopped apples (red delicious is my preference but you can play around here)
Salt and pepper, to taste
Pinch or three of sweetener

You can poach a chicken breast or two and then pull it apart or use left overs from your last roasted chicken as well canned chicken will do in a pinch.

Basically mix all the ingredients together in a bowl until well blended, adjusting as needed for consistency, texture and/or flavoring. Nice sweet grapes will generally cut the need for any extra sugar in the recipe but if not available I really do suggest a small pinch or two of Turbinado suger (sugar in the raw).

Spread on your favorite bread along with a leaf or three of your favorite lettuce (butter lettuce is nice) or make this into a wrap using either large leafs of lettuce or tortillas lined with lettuce.

This also makes a nice pasta salad, as it were. Make a batch of your favorite pasta like elbows or mostaccolli, cool the pasta in the fridge for a bit and then spoon a cup or two of the Chicken salad on.

This can easily be scaled up to whatever amount you need and stored for several days in the fridge. It makes a great snack for the kids when they come in from tearing up the neighborhood or at 2am when you are starving and don't want to cook something.

I keep it real simple.

For lunch:
A chocolate Nutrament, a 2 V8's and a banana. Also blend it all together after a workout for a great shake.

It's a great 512 calorie meal.

Mac & Cheese with a can of Ro-tel added (Tomatos & Green Chies)

Along with a lettce, avacodo and red onion, salad with Maries' chunky Blue Cheese dressing! :lifter

No sense starting a new thread....

Here is some Summer Fruit I made today...what else could be done with an extra case of blueberries sitting around?:o Also added some fresh pineapple, melon, canteloupe, grapes, strawberries and raspberries.

Made a chilled strawberry and pineapple dip with the trimmings...just toss in the blender with some cold creme cheese, a little cream, and fresh squeezed lime juice. (Add a pinch of sugar to sweeten.)

Anyone else beating the heat with something refreshing?

Here is some Summer Fruit I made today...what else could be done with an extra case of blueberries sitting around?:o Also added some fresh pineapple, melon, canteloupe, grapes, strawberries and raspberries.

Made a chilled strawberry and pineapple dip with the trimmings...just toss in the blender with some cold creme cheese, a little cream, and fresh squeezed lime juice. (Add a pinch of sugar to sweeten.)

Anyone else beating the heat with something refreshing?

Right now... keeping cool with iced tea, beer, stuff grilled outside that doesn't have to be "tended" too much, and salads.

Grill a couple of my home made sausages with diced tomatoes and diced Vlasic dill pickles. Las Olas Cole Slaw on the side. Waia'nae Lemonade to sip on while eating...

Las Olas Slaw- Las Olas is the name of a friend's place on the beach just North of Ensenada. His sister makes this delicious slaw.

1 Head of cabbage or prepacked bag of coleslaw
1/2 cup of red cabbage diced or sliced thin
1/2 cup raisins or dried cranberries or a combination of both.
1 diced Persimmon or more if needed
1/2 cup cashews
4 oz Olive oil
2 oz vinegar
Mix all ingredients, toss and serve.

TS's grilled and chilled veggies look flawless, and would go well with some chilled strawberry cheesecake....or a few of them! (These were very fun for me to make, and include edible flowers.);)

Those look good, TS. I'm sure I can whip up a vinegarette of some sort. Or maybe just use ranch dressing as a dip?

Mmmmm grilled veggies, nice job TS. I think I'd pass on any kind of dip or vinaigrette and eat those as is.

"Just picked" tomatoes and sweet corn from a farm out west of me. I simply cannot get enough of the corn this year, it is amazingly tender and sweet. If anyone is in the area do yourself a favor and go directly to Wagner's Farmstand 9937 S Rt 59 in Naperville, IL.

Also on a watermelon and Rainier cherry kick.

Gypsy, I'm jealous of the fresh-picked corn you're enjoying. Good corn up here is rare. Most of it is "cow corn" - good for feeding cows. :D I've heard corn is best eaten immediately after it's picked, and that's the problem here - by the time it arrives in stores, it's old.

Yesterday we had a picnic on the beach with grilled veggies: eggplant, zucchini, sweet onion, portabella mushrooms and sweet baby bell peppers marinated simply in olive oil, crushed garlic, salt and pepper.

Today we're having the leftovers with spiral pasta & fresh grated Parmesan. (And maybe a little sand from the beach...)

Just prepared a nice cold summertime beverage, to go with my nice, cold summertime near-death experience today! :p

When finally the hotel in Albuquerque was in sight, at 5:00 tonight, my thoughts were on all the foods never made in my life, but that had been trying to accomplish. :eek:

You see, today, I drove through not one, but TWO F---ing Monsoons.

The first was the WORST thing I have ever been involved in inside a vehicle, as the accompanying cloud to ground lightning all around me took my breath away...am just thankful to be alive! :-~

Though now having a very strong drink and marveling out the window of a very nice dark rainy mountainside view, it is actually nice to look at...

Anyway, it is 50 degrees outside, and when checking in earlier, my looks were of a wet mop from running through the wind (damn!) and cold rain to get inside! (Should have taken a photo, as it made me wish I was ten years old again, when that kind of thing was, "This is a Blast!" lol! :-)

Hey, I survived, so no complaints!.:cool:

I thought you were an Okie! Monsoons are a seasonal weather system which occasionally breed Thunderstorms. You drove through two F-ing T-storms. You've never done that before? :D

Going through Albuquerque in the early '70s, I got caught in a WET dust storm. The rain was mud and the windshield wipers did nothing to clear the windshield. Fortunately, everybody just stopped until it was over.

Well at least you stayed in a Holiday Inn Express that night!!! I have driven by this place over 1,000 times going to and from work or driving around the city.
