View Full Version : Marinades/Dressings using beer!

I am looking for some recipes for either a great marinade or salad dressings using beer as the base. Some great Vinagerettes are made using beers such as pilsners, pale ales and so on as well marinades/mops. I am looking for some recipes from everyone, being as creative as possible and using any kind of beer you wish to come up with something for me. It could be a BBQ based recipe or a marinade for some steaks, I do not care. I want to see them all.

I'm going to have to get my mom's recipes for:

Beef in Beer with Spaetzle (Berg Heiler's know what I mean there)

Shrimp Boiled in Beer

(no matter how old you get, always keep in touch with your mom, especially if she's a GREAT COOK)

I'll call her this weekend and get the recipes to post.

As a Belgian (=beercountry) I just have to give you some recipes.

Here´s one;

Beer-based BBQ-sauce:

Ingredients:
-1/2 bottle of pilsner (Like our Stella Artois,Jupiler,...).
-A bit of chillisauce.
-Two spoons of (extremely)finely cut onion.
-Two spoons of vinegar.
-Two spoons of Worcestersauce.
-Two spoons of Chilli powder.

Mix it all together thorougly and let it cook for two hours.

Ingredients:
-Beer.
-Chopped onions (in tiny pieces).
-Freshly grounded black pepper.
-A few parsley sticks(?).

Leave the meat in for at least four hours.Turn the meat once in a while.(Do not stick a fork or anything in the meat to turn it).

For strong meats:

Peel and shred an onion.Clean some carrots and cut them in bits.Clean leek(?) and cut it in rings.
Heat 25 grammes of butter in a pan.Mix the onion, carrot, leek, laurierleaves, and add cloves, pepper grains and thyme.
Put it on the stove for approx five minutes,stir often.Take it off the stove.
Add 1/2 liter of sweet beer (Kriek Lambikbeer for example).
Put the whole mixture in a bowl.
Put the meat in the bowl and leave it for 10 hours.

Alright gents, another reason to drink beer

FOR THE CHICKEN AND MARINADE:
12 whole chicken wings(2 1/2-3lbs)
1/4 c peanut oil
1/4 c lemon juice
1/4 c worcestershire sauce
1/4 c australian beer (such as Fosters)
1 teaspoon salt
1 teaspoon freshly ground black pepper

After cleaning the chicken, blot dry and make 2 or 3 deep slashes to the bone in the meaty portion of each wing. Put in large non reactive bowl, or ziplock bag(I have found zl bags to work best for me) and add ingredients listed above (pre-mixed of course). Marinate for 4 hours in the refrigerator. Now it is time to prepare the bbq sauce.

FOR THE BBQ SAUCE:
2 tablespoons peanut oil
1 small onion, finely chopped
1 clove garlic, minced
2 teaspoons minced fresh ginger
1/2 teasopoon hot red pepper flakes
1 c ketchup
1/3 c Australian beer
2 tablespoons lemon juice
2 tablespoons worcestershire sauce
2 tablespoons red wine vinegar
1 tablespoon firmly packed dark brown sugar
1 tablespoon honey
2 tablespoons soy sauce
1 teaspoon dry mustard
1/2 teaspoon freshly ground black pepper

While waiting for the chicken to marinate, be sure to finish off the rest of that beer before it gets warm. And get to putting together that BBQ sauce.
1. heat peanut oil in a medium size sauce pan over med. heat
2. add onion, garlic, ginger, and hot pepper flakes and saute until onion and garlic are lightly browned ( about 5 minutes).
3. stir in ketchup, beer, lemon juice, worcestershire sauce, vinegar, sugar, honey, soy sauce, mustard, pepper, and bring to a boil.
4. reduce heat to low and simmer until the sauce is thick and richly flavored (10-15minutes)
5. remove from heat and measure out about 1 cup, set this portion aside for serving.
6. Use the remainder of the sauce to brush on chicken during the last 5 minutes of grilling.

If done right, this chicken is the heat. I have built mucho rapport at cookouts with this one. Have fun, and by the way this recipe came from "The Barbeque Bible" by Steven Raichlen

Knowing how to cook will always help out a ODA down range. Some times its good for many other things. Winning those Hearts and Minds. :D


For RIBS:

One large Zip-lock bag
2 Litter of Coke
2-3 Dark beer- Pale Ale or IPA work best.
2-3 Tbs of A1 Sauce
A bit of Olive oil rub onto the ribs.
Salt and Pepper to taste.

Ensure you peel off the "fat" Skin from the back side of the ribs. Use a Small knife or butter knife to do this.


Throw the ribs into the Zip Lock bags, pour in the Coke, Beer, and A1 Sauce. Marinade for 4-6 hours.

Best to use a BBQ pit or a Grill that has burners that can be turned off on one side. This way you'll have one side on high and the other side off. You ribs go on the off side. Close the lid grill up for 15-20 mins, then put on the BQ sauce to taste.
