I love blueberries! Picked up some from the farmers market the other day and thought I'd try this recipie. Simple yet yummmmmmy.

2/3 cup flour
3 tablespoons brown sugar
1/4 teaspoon salt
5 tablespoons butter
1 pound blueberries
3/4 cup white sugar
1 teaspoon vanilla
1 teaspoon cinnamon

Mix flour, brown sugar and salt in a bowl. Melt the butter and add it to the flower mixture. Stir thoroughly and make it as granular as possible. Once texture is fine and crumbly, place in refrigerator for 2 hours. (this will serve as crust and top layer of the tart)

Put blueberries in a pan with white sugar and vanilla, cook over low heat for 10 minutes. Spread a thin layer of crumble mixture in the pie pan evenly over bottom. Carefully spread blueberries over the crust. Cover with the remainder of the crumble mixture, sprinkle the top with cinnamon and bake at 350 degrees for 40 minutes.

To serve you could add a dollop of either ice cream or whipped cream and sprinkle with a few rasberries to make this a red, white and blue treat. Or not. :D
